I love even more now that I have Fridays off, but still, they've always been pretty great -- everyone is always in such a good mood and there's just something special about them!

In Training

A food so nice I named it twice

Happy Thursday!!  

It's recipe time, y'all!

I found this sweet little concoction last year and it has been a favorite of my family's ever since.  This is a great side dish to make for any family gathering or quiet night at home.  The original version of the recipe came from Giada de Laurentiis here, but I've altered it a bit.

Sweet Couscous with Dried Fruit

1/3 cup dried apricots

1/3 cup dried cranberries (or craisins!)

1/3 cup dried cherries

2 1/3 cup water

1/2 cup sugar

2 1/2 cups couscous

-This is what the recipe calls for, but I usually use 1 box of couscous, which is about 1 1/2 cup

Chop the dried fruits.

Stir water, sugar and fruit together, and bring to a boil.

Once the water boils, remove from heat and stir in the couscous.

Let stand for 5 minutes, or until couscous has absorbed the water.  Stir and fluff couscous and fruit together.  Serve or Refrigerate.  Serve hot or cold!

Maxi skirts and dresses have been all the rage for a while now, but it took me  some time to jump on that train! I didn't know if they'd be flattering, but last year I tried on a friend of mine's maxi-dress and LOVED IT!  Every since then, I've been on the hunt for the perfect one, so of course I turned to Pinterest for inspiration.

And then, I found the perfect dress.

It's SO comfortable and versatile and easy and cute!  I just adore it!  I wore it to my cousin's bridal shower (more on that later), and I could just as easily wear it out to dinner or shopping or anywhere really!  Why didn't anyone tell me how amazing these things are sooner?!?!

Not long after wearing the dress, I decided I also needed a maxi skirt, thanks to my SIL trying one on, and me seeing how cute these babies are too!  I was looking at it, and could just imagine a million different ways and places I can wear it!  My favorite:  traveling on an airplane, to be comfortable and have to touch the yuck seats, but still looking put together and fashionable.  So of course, I turned back to Pinterest.

And then, I watched the Survivor finale on Sunday night, and one of the girls was wearing...

A MAXI SKIRT!

Right then and there, I decided I just needed a purple skirt, so that I could recreate this exact outfit one day!  And then, the J. Crew angels shone down on me, and a purple maxi skirt showed up in the J. Crew sale.

So I bought it, obvs.
